Almost five years ago, Nick Rudge took the gamble of opening its own restaurant in the heart of Conwy - just as the world was emerging from the pandemic.
Nick had previously worked at Heston Blumenthal's Michelin-starred The Fat Duck in Bray but always harboured dreams of running his own place.
Jackdaw, above Conwy's High Street, has proved a huge success - with regular accolades and a place in the Michelin Guide. Serving up £125 tasting menus, it is a place for a multiple-course treat but its status has ensured a regular flow of customers. When owner and head chef Nick decided it was time for a new challenge - alongside Jackdaw - he didn't look too far away, taking on the former Midland tapas bar on Castle Street. The site - a stone's throw from Jackdaw - has been empty since 2024 and was once tipped for a Greggs bakery.
But now Nick is set to open a "very casual" dining spot, named The Nest. It will be open by early October with an exact date to be confirmed.
Talking about the current restaurant, Nick, 32, said: "Jackdaw will celebrate its fifth anniversary in October and we've had guests from all over the world - which has been amazing.
"Conwy in itself is a reason to visit and it has definitely got busier in the time we've been here -what we do is give a nod to the area we live in and in respect to the produce we use.
"Restaurants are always busy at the start when they are new and fresh but it is about keeping that momentum up - listening to locals and regulars, which is so important.
"We have some guests who eat here every month so we listen to them, they are real experts."
He said The Nest will be Jackdaw's 'taller little sibling' - a reference to the fact that while newer it will also be larger, with 60 covers and a small bar area.
He said: "The place will be very casual, al la carte style rather than a tasting menu. We'll do burgers, steaks, fries, slaw and things like this.
"They will be no stiffness to it. A lot are surprised at how relaxed Jackdaw is for fine dining, that is what I like and it will be the same at The Nest. We like music playing and I personally pick the playlist.
"The bar area will have cocktails and bar snacks and people will also just be able to come for a drink."
The new restaurant will open five days a week - from 12pm - during the quieter months and seven days over the summer and Christmas.
There will be a new head chef and team of around 15 to 20 staff in place although Nick will be there each day too, alongside running Jackdaw. He is not daunted by the extra work.
He said: "It will be a fun balance - I love it, I love working here and the people I work with. It is also a good opportunity for the team here, they will take on more responsibility."
On deciding to have his second site so close, he said: "We've done well at Jackdaw and I want to put that money back into the local area. I also live in Conwy, literally down, or up, the road to each restaurant. It is another reason it makes sense to do this in Conwy."
He added: "It will be very much affordable - a place for locals, tourists and families. We get that at the Jackdaw people save their money and come and eat here.
"It is value though for the produce we use here, some of the invoices are quite scary. We also have a great team and I want to be able to pay them well."
Work is now underway at the new site and Nick says he is "giving myself two months".
He added: "We are going to start recruiting over the next two weeks. They will learn what we are about at Jackdaw and then move to The Nest. I think it will be a great opportunity, senior members can help shape The Nest."
The new opening will coincide with the five year anniversary with a series of special events - alongside suppliers - over the month of October to celebrate this.
